1 cup butter
1/2 cup packed brown sugar
1 teaspoon vanilla extract
3 cups quick-cooking oats
1 cup semisweet chocolate chips
1/2 cup peanut butter
Instructions
Preparation: Grease a 9x9-inch square pan.
Base Layer: In a large saucepan over medium heat, melt the butter. Stir in the brown sugar and vanilla extract. Add the oats and cook for 2 to 3 minutes on low heat, ensuring everything is well combined. Press half of this mixture into the bottom of the prepared pan, reserving the remaining half for later.
Chocolate Layer: In a separate saucepan over low heat, melt the chocolate chips and peanut butter together, stirring frequently until smooth. Pour this chocolate mixture over the oat base in the pan, spreading it evenly using a knife or the back of a spoon.
Top Layer: Crumble the reserved oat mixture over the chocolate layer, pressing it in gently.
Chilling: Cover the pan and refrigerate for 2 to 3 hours or overnight. Allow the bars to come to room temperature before cutting them into individual servings. Enjoy!
