Creamy 3-Ingredient Air Fryer Yogurt Cake
Instructions
1. Prepare the Pan
Grease and Flour: Thoroughly grease your air fryer-safe cake pan (like the tube pan shown) with butter or cooking spray. Lightly dust the greased pan with a thin layer of flour to ensure the cake releases easily.
2. Mix the Batter
In a large bowl, whisk together the yogurt and sweetened condensed milk until the mixture is smooth and uniform. (If using granulated sugar, whisk it until dissolved).
Gently fold in the self-rising flour until just combined. Do not overmix the batter; overmixing will develop the gluten and result in a tougher cake. A few small lumps are fine.
If using, fold in the lemon zest now.
3. Air Fry the Cake
Pour the batter into the prepared pan.
Place the pan carefully into the air fryer basket.
Bake at 320°F (160°C). This lower temperature is essential for preventing the outside from burning before the inside is cooked.
Bake Time: Cook for approximately 30 to 40 minutes. The exact time will depend on your air fryer model and pan size.
Check for Doneness: The cake is done when the top is golden brown (as seen in the image), and a toothpick inserted into the thickest part comes out clean.
4. Cool and Serve
Carefully remove the pan from the air fryer. Let the cake cool in the pan for 10 to 15 minutes.
Invert the cake onto a wire rack to cool completely.
Serving Suggestion: Serve dusted with powdered sugar, or topped with fresh berries, a light yogurt glaze, or a drizzle of honey.
🍽️ Why an Air Fryer is Perfect for Baking
The air fryer, which is essentially a powerful countertop convection oven, is ideal for this cake:
Circulating Heat: The continuous fan-forced air ensures even cooking, which helps prevent a sunken or undercooked center.
Perfect Crust: The concentrated dry heat is excellent for creating the beautiful, golden-brown crust and slight lift visible in your image.
Portion Control: Air fryer-safe pans are typically smaller, resulting in a perfectly portioned cake for smaller gatherings or quick weeknight dessert cravings.
