THE INGREDIENTS LIST:
For the Crust:
1 1/2 Cups.Of graham cracker crumbs.
1/3 Cup.Of melted butter.
1/4 Cup.Of granulated sugar.
For the Cheesecake Filling:
24 ounces cream cheese, softened.
1 Cup.Of granulated sugar.
3 large eggs.
1 Tsp.Of vanilla extract.
1/2 Cup.Of sour cream.
For the Pecan Pie Topping:
1 Cup.Of pecan halves.
1/2 Cup.Of unsalted butter.
1 Cup.Of light corn syrup.
1 Cup.Of granulated sugar.
3 large eggs, beaten.
1 Tsp.Of vanilla extract.
INSTRUCTIONS:
1st Step
Mix sugar, butter, and graham cracker crumbs together. Press the mixture into the bottom of a springform pan, producing an equal layer for the foundation of your Pecan Pie Cheesecake.
2nd Step
In a large mixing bowl, whip the cream cheese that has been softened until it is smooth. Sour cream, sugar, eggs, and vanilla extract should be mixed. The cheesecake batter is ready, so pour it over the crust.
3rd Step
For 45-50 minutes at 325 degrees Fahrenheit (160 degrees Celsius), or until the sides are set but the middle is still somewhat jiggly, in a preheated oven. Let it cool while you make the topping for the pecan pie.
4th Step
Melt butter in a saucepan over a medium heat setting. Mix in the sugar, corn syrup, and eggs. Keep swirling until the mixture begins to thicken. Turn off the heat, then mix in the vanilla essence and the pecan halves until the nuts are evenly coated.
5th Step
Spread the pecan pie topping evenly over the chilled cheesecake using a spoon. Return the cheesecake to the oven and bake for an additional 25-30 minutes or until the pecan pie layer is set.
6th Step
After the Pecan Pie Cheesecake has cooled fully, put it in the fridge for at least 4 hours and ideally overnight. After being chilled, the flavors will have had time to blend, and the textures will have hardened, making for a slice that is at once creamy and crunchy.
7th Step
For an extra indulgent touch, top each dish with a few pecan halves and/or a drizzle of caramel sauce. You get a little bit of everything in every bite: the creaminess of cheesecake, the crunch of nuts, and the comforting sweetness of pecan pie.
