Ingredients:
1 tablespoon oil
1 tablespoon minced garlic
1 pound medium shrimp, peeled and deveined
3 cups cooked white rice
2 cups frozen peas and carrots, defrosted
2 tablespoons soy sauce
2 teaspoons sesame oil
1 large egg, whisked
2 tablespoons sliced green onions
Instructions:
Wash and rinse the shrimp, setting them aside.
Cook the white rice as directed and set it aside.
Heat a medium skillet over medium heat and add the oil and minced garlic. Stir for about a minute until fragrant.
Toss the peas mixture and shrimp into the sauté pan, combining them well. Cook for 5 minutes.
In a small bowl, combine the sesame oil and soy sauce. Add this mixture to the white rice and stir.
Sauté the rice mixture for 4 minutes.
Push the rice and shrimp mixture to one side of the skillet.
Add the whisked egg to the sauté pan, stirring constantly until almost fully cooked, then fold it into the rice mixture.
Garnish with sliced green onions.
