STUFFED PEPPER SOUP

 


Ingredients:


One lb. ground beef.


One onion, chopped.


Two bell peppers (1 green, 1 red), chopped.


3 cloves garlic, minced.


One tsp each of oregano, basil, and thyme.


2 cans of fire-roasted tomatoes.


One can of tomato sauce.


Two cups beef broth.


Two tbsp brown sugar.


3/4 cup rice.


Salt and pepper to taste.


Fresh parsley and cheddar cheese (for garnish).


Instructions:

First, brown ground beef in a pot, then add chopped onions and bell peppers. Cook until soft, and drain excess grease.
