Ingredients:
3 cups chopped English cucumber (approximately 1 1/2 cucumbers)
1 1/2 cups halved grape tomatoes
1/2 thinly sliced onion
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh parsley
Dressing:
2 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions:
In a large bowl, combine chopped cucumbers, halved grape tomatoes, sliced onions, dill, and parsley.
In a small mason jar, combine the dressing ingredients. Shake well to combine, or whisk together in a small bowl.
Pour the dressing over the salad and toss to coat evenly.
Cover the salad and let it chill in the refrigerator until ready to serve.
