Ingredients:
3 cups Idaho potatoes, peeled, boiled, and cubed (approximately 1 lb)
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 pound diced Velveeta cheese
1/2 cup shredded sharp cheddar cheese
1 lb skinless smoked sausage, halved lengthwise and chopped into
1/2-inch "half-moon" cuts
1/8 teaspoon paprika
Instructions:
In a cast-iron frying pan, cook the skinless smoked sausage for about 15 minutes, turning frequently until it is slightly browned.
In a 2-quart casserole dish, combine the cooked and diced potatoes with the cooked meat, giving it a gentle toss.
In a saucepan over medium heat, mix all remaining ingredients (excluding shredded cheddar cheese and paprika) until the mixture is warm, melted, and smooth. Stir constantly with a whisk.
Pour the white/cheese sauce over the potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, followed by an even sprinkle of paprika.
Bake in a preheated 350°F oven for 35-45 minutes, keeping an eye on it until it turns golden brown on top.
