Instructions:
Preheat the oven to 375°F.
Butter the bottom of a baking dish (13 inches x 9 inches x 4 inches deep).
Season chicken breasts on both sides with salt, lemon pepper seasoning, and a dash of paprika. Place the chicken breasts, flat side down, in the greased baking dish. Bake for 15-20 minutes at 375°F.
Creamed Spinach: In a large skillet, heat 1 tablespoon vegetable oil on medium heat. Add spinach and cook for 1-2 minutes, covered, until wilted. Remove from heat. Add minced garlic and half and half. Bring to a boil. Stir in shredded mozzarella cheese until melted and smooth. Season with salt to taste. Remove from heat.
Cook Mushrooms: In a separate pan, heat 1 tablespoon vegetable oil. Add sliced mushrooms and cook on high-medium heat for 1-2 minutes until caramelized. Avoid salting mushrooms to promote caramelization.
Smothered Chicken Assembly: Remove the partially baked chicken breasts from the oven. Top each with creamed spinach, chopped bacon, cooked mushrooms, and slices of Pepper Jack or Monterey Jack Cheese. Bake uncovered for an additional 15-20 minutes until chicken is cooked through and no longer pink in the center. Optionally, broil for the last 2-4 minutes, being careful not to burn the cheese on top.
