DELICIOUS FRUIT SALAD

 


Ingredients:


2 cups sliced strawberries


2 cans sliced peaches (15 oz. each) – reserve juices from one can, drain the other


1 can mandarin orange segments (11 oz.) – drained


1 can pineapple chunks (15 oz.) – drained


2 sliced bananas


1 cored and diced green or red apple


1 ½ cups washed and drained blueberries


1 ½ cups washed and halved purple grapes


1 lemon


3 tablespoons instant vanilla pudding mix (regular or sugar-free)


Directions:


Zest the lemon.


Drain one can of peaches, capturing the juices in a large bowl. Place the peaches in a separate bowl.


Stir 3 tablespoons of vanilla pudding mix into the peach juice.


Drain the remaining can of peaches, mandarin oranges, and pineapple chunks. (No need to keep the juice from these fruits.)


Add all the fruit and lime zest to the pudding mixture. Gently stir to combine.


Chill for at least 30 minutes before serving.


Notes:


Feel free to substitute fruits; raspberries and blackberries are great additions, especially when in season. You can also include coconut flakes for extra flavor.


Opt for fresh fruit over canned if available. Ensure to reserve the juices from one can of fruit to mix with the pudding. 


Fresh peaches can be used instead of canned ones; peel and toss with a small amount of lemon or lime juice to prevent browning.
