Made this last night and it was so yummy! Hubby asked for 3 helpings!

 


Instructions:

1. Preheat and Season:

2. Sear the Pork Chops:

  • Sear the seasoned pork chops for about 3-4 minutes on each side until golden brown. Remove the pork chops from the skillet and set them aside.

3. Prepare Creamy Sauce:

  • In the same skillet, melt butter over medium heat.
  • Add chopped onion and minced garlic, sautéing until fragrant and onions are translucent.
  • Pour in chicken broth, heavy cream, and dried thyme. Season with salt and pepper to taste.
  • Let the sauce simmer for a few minutes until it slightly thickens.

4. Layer Potatoes and Pork Chops:

  • Arrange the sliced potatoes evenly in the bottom of the skillet, seasoning with salt and pepper.
  • Place the seared pork chops on top of the potatoes in the skillet.

5. Bake:

  • Pour the creamy sauce over the pork chops and potatoes in the skillet, ensuring even coverage.
  • Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.

6. Cook Until Tender:

  • Bake the Creamy Pork Chops and Potatoes for about 30-35 minutes or until the potatoes are fork-tender and the pork chops are cooked through (internal temperature of 145°F/63°C).
  • Optionally, remove the lid or foil during the last 10 minutes of baking for a golden brown finish.

7. Garnish and Serve:

  • Once cooked, remove the skillet from the oven.
  • Garnish with chopped fresh parsley for a pop of color and freshness.
