Nostalgic Delight: Old-Fashioned Potato Candy Recipe

INSTRUCTIONS:

  • 1st Step – Peel and chop the potato into small pieces. Boil or steam until tender. Mash the cooked potato thoroughly until no lumps remain. Allow it to cool slightly.

  • 2nd Step – In a mixing bowl, combine the mashed potatoes, vanilla extract, and a pinch of salt. Gradually add powdered sugar, about a cup at a time, mixing well after each addition. Continue adding powdered sugar until the mixture forms a dough-like consistency that is easy to handle but not too sticky.

  • 3rd Step – Dust a clean surface or parchment paper with powdered sugar. Place the potato-sugar mixture on the surface and knead it gently until smooth. Use a rolling pin to roll out the dough into a rectangle, about 1/4 inch thick.

  • 4th Step – Spread a generous layer of smooth peanut butter evenly over the rolled-out dough. Leave a small border around the edges to prevent the filling from oozing out when rolled.

  • 5th Step – Starting from one end, carefully roll the dough into a tight log, similar to rolling a jelly roll or sushi roll. Use the parchment paper or surface to help guide the rolling process and maintain the shape.

  • 6th Step – Wrap the rolled candy log in plastic wrap or wax paper and refrigerate for at least 1-2 hours until firm. Once chilled, unwrap and use a sharp knife to slice the log into rounds.

  • 7th Step – Arrange the sliced Old-Fashioned Potato Candy on a serving plate and savor the nostalgic flavors with family and friends. Store any leftovers in an airtight container in the refrigerator for freshness.

TIPS FOR SUCCESS:

  • Use smooth, creamy peanut butter for easy spreading and a uniform filling.
  • Experiment with different nut or seed butters for flavor variations.
  • Dust your hands with powdered sugar while handling the dough to prevent sticking.
