INSTRUCTIONS:
Preheat and Prepare:
- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or cooking spray, ensuring even coverage.
Cook the Rice and Blanch the Broccoli:
- Cook the rice according to package instructions until tender and fluffy. Set aside.
- Meanwhile, blanch the broccoli florets in boiling water for 2-3 minutes, then immediately transfer them to an ice bath to stop the cooking process. Drain and set aside.
Make the Cheese Sauce:
- In a saucepan over medium heat, melt the butter. Once melted, add the minced garlic and cook for 1-2 minutes until fragrant.
- Whisk in the flour to create a roux, cooking for another 1-2 minutes until golden brown.
- Slowly pour in the chicken broth and milk, whisking continuously to prevent lumps from forming.
- Stir in the dried thyme, salt, and pepper, and continue cooking until the sauce thickens, about 5-7 minutes.
- Remove the saucepan from the heat and stir in 1 cup of shredded cheddar cheese and 1/4 cup of grated Parmesan cheese until melted and smooth. Set the cheese sauce aside.
Assemble the Casserole:
