Combine in a large bowl:
1 10 oz bag of shredded carrots
1 green apple, thinly sliced
1 red apple, thinly sliced
3/4 cup dried cranberries
1 cup chopped walnuts
For the dressing, whisk together in a separate bowl:
1/3 cup mayonnaise
2 tablespoons sour cream
2 tablespoons apple cider vinegar
2 tablespoons honey
Juice of one lemon
Salt and pepper to taste
Pour the dressing over the apple and carrot mixture. Mix well and adjust seasoning with more salt and pepper if needed.
Chill in the refrigerator for at least 3 hours before serving.
