Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the muffin cups with cooking spray.

  2. Prepare the Streusel Topping: In a small bowl, combine the flour and sugar for the streusel topping. Add the cold cubed butter and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs. Set aside.

  3. Prepare the Muffin Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined. In a separate bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract until smooth. Pour the wet ingredients into the dry ingredients and stir until just combined.
