Mounds Cake: A Decadent Chocolate and Coconut Delight

Method

  1. Prepare the Cake:

    • Preheat your oven to the temperature specified on the cake mix box.
    • Grease and flour two 9-inch round cake pans.
    • Prepare the chocolate cake mix according to the package instructions.
    • Divide the batter evenly between the prepared cake pans and bake according to the package instructions, until a toothpick inserted into the center comes out clean.
    • Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  2. Make the Coconut Filling:

    • In a medium saucepan, combine the sweetened condensed milk, shredded coconut, granulated sugar, and heavy cream.
    • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil.
    • Remove from heat and let cool slightly.
  3. Assemble the Cake:

    • Place one cake layer on a serving plate.
    • Spread the coconut filling evenly over the top of the first layer.
    • Place the second cake layer on top of the filling, pressing down gently to secure.
  4. Prepare the Chocolate Frosting:

    • In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
    • Place the semisweet chocolate chips in a heatproof bowl.
    • Pour the hot cream over the chocolate chips and let sit for a few minutes to melt the chocolate.
    • Add the vanilla extract and whisk until the mixture is smooth and glossy.
  5. Frost the Cake:

    • Allow the chocolate frosting to cool slightly until it thickens to a spreadable consistency.
    • Spread the frosting evenly over the top and sides of the assembled cake.
    • Garnish with additional shredded coconut if desired.
  6. Chill and Serve:

    • Refrigerate the cake for at least 1 hour before serving to allow the filling and frosting to set.
    • Slice and serve chilled or at room temperature.

Tips for Perfect Mounds Cake

  • Room Temperature Ingredients: Ensure that all your ingredients, especially eggs and butter, are at room temperature before mixing the cake batter for a more even texture.
  • Homemade Cake Option: If you prefer a homemade cake, use your favorite chocolate cake recipe instead of a boxed mix.
  • Decoration: Sprinkle some toasted coconut flakes on top for an added crunch and a beautiful presentation.

Versatile and Delicious

Mounds Cake can be customized in various ways to suit different tastes and occasions:

  • Almond Joy Variation: Add a layer of chopped almonds between the cake layers to mimic the flavors of an Almond Joy bar.
  • Different Frosting: Try a cream cheese frosting or a whipped ganache for a different texture and flavor profile.
  • Mini Cakes: Make individual mini Mounds cakes by using a muffin tin instead of cake pans.
