A Burst of Flavor: Mastering Mojo Potatoes

 


INSTRUCTIONS:

  1. Preheat the Oven:

    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Prepare the Potatoes:

    • Cut the scrubbed and dried potatoes into wedges or cubes, depending on your preference. Aim for uniform pieces to ensure even cooking.
    • Place the potato wedges or cubes in a large mixing bowl and set aside.
  3. Make the Mojo Marinade:

    • In a small bowl, combine the olive oil, minced garlic, lime zest and juice, orange zest and juice, ground cumin, paprika, chili powder, salt, and black pepper. Whisk together until well blended.
    • This flavorful marinade, inspired by traditional Cuban Mojo sauce, infuses the potatoes with a burst of citrusy, garlicky goodness.
  4. Coat the Potatoes:

    • Pour the Mojo marinade over the potato wedges or cubes, tossing gently to coat each piece evenly. Ensure that the potatoes are well coated with the flavorful marinade, as this will enhance their taste during baking.
  5. Bake the Potatoes:

    • Arrange the coated potato wedges or cubes in a single layer on the prepared baking sheet, leaving space between each piece to allow for even browning.
    • Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the potatoes are golden brown and crispy on the outside, and tender on the inside. You may need to flip the potatoes halfway through the baking time to ensure even cooking.
  6. Garnish and Serve:

    • Once the Mojo Potatoes are done baking, remove them from the oven and transfer them to a serving platter.
    • Garnish with chopped fresh cilantro for a pop of color and herbaceous flavor, if desired.
    • Serve the Mojo Potatoes hot as a side dish, appetizer, or snack, alongside your favorite dipping sauce or as part of a larger meal.
