Method:
Prepare the Caramel:
- In a medium saucepan, heat the granulated sugar over medium heat, stirring constantly with a heat-resistant spatula or wooden spoon. The sugar will start to clump and then melt into a thick amber-colored liquid as it caramelizes.
- Once the sugar has completely melted and turned a deep amber color, add the butter pieces. Be careful as the mixture will bubble up vigorously.
- Stir the butter into the caramel until completely melted and combined.
- Slowly pour in the heavy cream while stirring continuously. Again, be cautious as the mixture will bubble up.
- Allow the mixture to boil for 1 minute, then remove the saucepan from the heat.
- Stir in the vanilla extract and salt until smooth.
Assemble the Turtle Candies:
- Line a baking sheet with parchment paper or a silicone baking mat.
- Arrange pecan halves in clusters of 3 on the prepared baking sheet, leaving space between each cluster for the caramel.
Add the Caramel:
- Spoon a small amount of caramel over each cluster of pecans, covering them partially. The caramel will spread slightly as it cools.
Cool and Set:
- Allow the caramel to cool and set at room temperature for about 30 minutes to 1 hour, or until firm to the touch.
Coat with Chocolate:
- Melt the dark or milk chocolate in a heatproof bowl set over a saucepan of simmering water (double boiler method) or in the microwave in short bursts, stirring frequently until smooth.
- Using a spoon or fork, carefully dip each caramel-pecan cluster into the melted chocolate, ensuring it is fully coated.
- Lift the candies out of the chocolate, allowing any excess chocolate to drip back into the bowl.
Set and Serve:
- Place each chocolate-coated turtle candy back onto the lined baking sheet.
- Allow the chocolate to set completely at room temperature or expedite the process by placing the baking sheet in the refrigerator for about 15-20 minutes.
