Loaded Broccoli Potato Soup

 


Instructions:


Cook the Vegetables:


In a large pot, combine the chicken broth, carrots, potatoes, and onion powder.

Cover and bring to a simmer. Cook for about 10 minutes, until the vegetables are almost tender.


Add Broccoli:


Stir in the chopped broccoli, cover again, and cook for another 10 minutes, until all the vegetables are tender.


Make the Cheese Sauce:


In a separate large saucepan, melt the butter over low heat.

Whisk in the flour and cook for about 1 minute, until it turns a light golden brown.

Gradually whisk in the milk and cook for 5 more minutes, stirring constantly, until the sauce thickens.


Melt the Cheese:


Add the shredded cheddar cheese to the sauce, stirring constantly until the cheese is fully melted and smooth.

Season with garlic powder and salt.


Combine the Soup:


Pour the cheese sauce into the large pot with the cooked vegetables. Stir until everything is well combined and creamy.

If the soup is too thick, you can thin it out by adding a bit more milk.

Serve:


Season with additional salt and pepper to taste.

Ladle the soup into bowls, and top with the crispy cooked bacon.
