Broccoli cheddar soup recipe
This creamy and comforting soup is packed with the goodness of broccoli and the richness of cheddar cheese—perfect for a cozy meal!
Ingredients
Vegetables:
1 large head of broccoli, chopped into florets
1 small onion, diced
2 cloves of garlic, minced
Broth and Dairy:
4 cups chicken broth or vegetable broth
2 cups shredded cheddar cheese
1 cup heavy cream
2 tablespoons butter
Seasoning:
Salt and pepper to taste
Instructions
Prepare the Vegetables
Heat the butter in a large pot over medium heat.
Add the diced onion and sauté for 3-4 minutes until softened.
Stir in the minced garlic and cook for 1 more minute until fragrant.
Cook the Broccoli
Add the chopped broccoli florets to the pot and pour in the chicken or vegetable broth.
