Shrimp and Egg Fried Rice Recipe
Instructions
Step 1: Prepare the Ingredients
Ensure your rice is cold and separated for easy frying. If using fresh rice, spread it out on a baking sheet to cool and dry slightly before cooking. Pat the shrimp dry and season lightly with salt and white pepper.
Step 2: Cook the Eggs
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and scramble them quickly until just set. Remove from the pan and set aside.
Step 3: Sauté the Shrimp
In the same pan, add the remaining 1 tablespoon of oil. Cook the shrimp for about 1-2 minutes per side until they turn pink and opaque. Remove and set aside with the eggs.
Step 4: Stir-Fry the Aromatics and Vegetables
Add the minced garlic to the pan and sauté for about 30 seconds until fragrant. Stir in the peas and carrots, cooking for another minute.
Step 5: Add the Rice
Increase the heat to high and add the cooked rice to the pan. Stir well to combine and break up any clumps.
Step 6: Season and Combine
Pour in the soy sauce and sesame oil, stirring to evenly coat the rice. Add back the cooked shrimp and eggs, then toss everything together. Stir in the chopped green onions and cook for another minute.
Step 7: Serve and Enjoy
