Ingredients
For the Layers:
• 1 box graham crackers (about 16 oz)
• 2 boxes (3.4 oz each) instant vanilla pudding
• 3 cups cold milk
• 1 container (8 oz) whipped topping (like Cool Whip), thawed
For the Chocolate Topping:
You can use either store-bought chocolate frosting or homemade ganache. Here's how to make both options:
Option 1: Easy Chocolate Frosting (store-bought)
• 1 tub of chocolate frosting (microwave slightly to make it spreadable)
Option 2: Homemade Chocolate Ganache
• 1 cup heavy cream
• 1 cup semi-sweet chocolate chips
Step-by-Step Instructions
Step 1: Make the Pudding Filling
In a large bowl, whisk together the vanilla pudding mixes and cold milk for about 2 minutes until thickened. Gently fold in the whipped topping until smooth and fluffy. Set aside.
Step 2: Layer the Graham Crackers
In a 9x13-inch baking dish, place a single layer of graham crackers on the bottom. Break them if needed to fit and cover the entire surface.
Step 3: Add the Pudding Mixture
Spread half of the pudding mixture evenly over the graham cracker layer. Smooth it out with a spatula.
Step 4: Add the Second Graham Cracker Layer
Place another layer of graham crackers over the pudding.
Step 5: Add the Rest of the Pudding
Spread the remaining pudding mixture over the second layer of graham crackers, and then top with a final layer of crackers.
Step 6: Prepare the Chocolate Topping
If using store-bought frosting:
Microwave the tub for about 15 seconds, then stir until smooth. Spread evenly over the top graham cracker layer.
If making homemade ganache:
In a small saucepan, heat the heavy cream until it just begins to simmer (don’t boil). Pour it over the chocolate chips in a bowl and let sit for 1–2 minutes. Stir until smooth and glossy, then pour and spread evenly over the dessert.
Step 7: Chill
Cover the dish with plastic wrap or foil and refrigerate for at least 4 hours, or ideally overnight. This allows the graham crackers to soften and the flavors to blend into that classic eclair-like texture.
Serving Tips
• Slice into squares using a sharp knife.
• Wipe the knife between cuts for cleaner edges.
• Garnish with a dusting of cocoa powder or a few chocolate shavings for a fancy touch.
Memories in Every Bite
This dessert is more than just layers of pudding and crackers — it’s a memory of long summer days at my grandparents’ house, learning how to whip pudding, spreading frosting with a plastic spoon, and sneaking tastes when no one was looking. It’s a dish filled with heart and heritage, and now, I hope it becomes just as special in your home.
