Classic Southern Peach Cobbler

👩‍🍳 Instructions:

1️⃣ Prep the Peaches

  • Preheat oven to 400°F (200°C).

  • In a large bowl, combine sliced peaches with sugars, cinnamon, nutmeg, lemon juice, and cornstarch.

  • Transfer the mixture to a cast-iron skillet or baking dish, spreading evenly.

2️⃣ Make the Topping

  • In a separate bowl, mix flour, sugars, baking powder, and salt.

  • Add cold butter and cut it into the flour using a pastry cutter or your fingertips until it resembles coarse crumbs.

  • Stir in hot water gradually—just enough to bring the dough together.

3️⃣ Assemble & Bake

  • Drop spoonfuls of dough over the peach filling, spreading gently to cover most of the surface.

  • Sprinkle the top with extra sugar for a crisp, sweet finish.

  • Place the skillet on a baking sheet to catch any drips.

  • Bake for 30–35 minutes, or until the top is golden brown and the filling is bubbling at the edges.

4️⃣ Serve It Up!

  • Let cool for 10–15 minutes to allow the juices to thicken.

  • Serve warm with a generous scoop of ice cream or a dollop of whipped cream.

🍽 Tips & Easy Variations

  • Too tart? Adjust sugar based on how sweet your peaches are.

  • Frozen peaches: Work great—just thaw and drain before using.

  • Canned peaches: Drain 2 cans, and add juice from 1 can to the mix.

  • Add a crunch: Sprinkle with chopped pecans or oats before baking.

  • Make it your own: Try using nectarines, plums, or a mix of summer fruits!
