Peanut Butter Lunch Lady Bars

Step-by-Step Instructions

1. Prepare the Pan

Preheat oven to 400°F (200°C). Grease a 13x18-inch rimmed half-sheet pan or line it with parchment paper for easy cleanup.

2. Make the Batter

  • In a large bowl, whisk together the flour, sugar, baking soda, and salt.

  • In another bowl, whisk the milk, eggs, and vanilla until smooth. Set aside.

  • In a medium saucepan over medium heat, melt the butter and peanut butter together. Stir until smooth and just starting to bubble, then remove from heat.

  • Pour the warm peanut butter mixture into the dry ingredients and stir gently until combined.

  • Add the milk-egg mixture and mix until the batter is smooth and uniform.

3. Bake the Bars

Spread the batter evenly into the prepared pan. Bake for 18–22 minutes, until the edges are golden and a toothpick comes out clean. Place on a wire rack and let the bars cool completely.

4. Make the Frosting

  • In a clean saucepan, melt the butter and peanut butter together over medium heat until smooth and gently bubbling. Remove from heat.

  • Stir in the milk.

  • Gradually whisk in the sifted powdered sugar until silky smooth and pourable.

5. Frost & Finish

  • Pour the warm frosting over the cooled bars and spread evenly with an offset spatula.

  • Let the frosting set at room temperature for about 1 hour.

  • For neat slices, chill in the fridge for 20–30 minutes before cutting.

Chef’s Tips

  • Use creamy peanut butter for the best texture (avoid natural peanut butter as it may separate).

  • Want a twist? Sprinkle mini chocolate chips or chopped peanuts over the frosting before it sets.

  • Store leftovers covered at room temperature for up to 3 days or refrigerate for up to a week.

These Peanut Butter Lunch Lady Bars are soft, sweet, and nostalgic—just like the ones from your school days, but even better homemade! Perfect with a glass of cold milk or a cup of coffee.
