Cheesy Baked Onion Rings

Directions

  1. Preheat Oven
Heat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Prepare Onions
Slice onions into discs and gently separate them into individual rings.

  3. Make the Coating
In a shallow bowl, combine almond flour, paprika, garlic powder, cayenne, salt, pepper, and Italian seasoning.

  4. Dip & Dredge
Place whisked eggs in a second bowl. Dip each onion ring into the egg wash, then dredge in the almond flour mixture, making sure it’s well coated.

  5. Arrange & Top
Lay coated onion rings on the prepared baking sheet. Sprinkle generously with mozzarella and Parmesan.

  6. Bake
Bake 15–20 minutes, until the cheese is golden and bubbly and the coating is crisp.

  7. Serve
Let cool for a few minutes before serving (they’ll firm up as they sit).

Variations & Tips

  • Spicy Kick: Add extra cayenne or a dash of hot sauce to the egg wash.

  • Flour Swap: Coconut flour can be used in place of almond flour (though texture may differ).

  • Flavor Twist: Try cumin and chili powder instead of Italian seasoning for a Tex-Mex flair.

  • Cheese Options: Swap in cheddar, provolone, or pepper jack for different flavor combos.

  • Make-Ahead: Bread the onion rings and refrigerate for a few hours before baking — perfect for party prep.
