Prepare Onions
Slice onions into discs and gently separate them into individual rings. -
Make the Coating
In a shallow bowl, combine almond flour, paprika, garlic powder, cayenne, salt, pepper, and Italian seasoning. -
Dip & Dredge
Place whisked eggs in a second bowl. Dip each onion ring into the egg wash, then dredge in the almond flour mixture, making sure it’s well coated. -
Arrange & Top
Lay coated onion rings on the prepared baking sheet. Sprinkle generously with mozzarella and Parmesan. -
Bake
Bake 15–20 minutes, until the cheese is golden and bubbly and the coating is crisp. -
Serve
Let cool for a few minutes before serving (they’ll firm up as they sit).
