Season cauliflower: In a large bowl, toss florets with olive oil, salt, pepper, and garlic (if using).

If making the parmesan version, add parmesan and panko at this stage.

Roast: Spread evenly on a baking tray. Roast for 20 minutes, then flip pieces and roast another 5 minutes, or until edges are golden and centers are tender.

Serve: Sprinkle with parsley and enjoy hot from the oven.
