Instructions
1. Clean the Lemons

Scrub lemons under cold water with a brush or cloth.

For non-organic lemons, soak in warm water with 1 tablespoon baking soda for 15–20 minutes.

Rinse and dry thoroughly.
2. Slice Thinly

Cut lemons into thin rounds, about ⅛–¼ inch thick.

Remove seeds to prevent bitterness.

Lay slices in a single layer on dehydrator trays or a baking sheet if using the oven.
3. Dehydrate

Dehydrator: Set to 125–135°F (52–57°C) and dry for 8–16 hours until slices are brittle and snap easily.

Oven: Set to the lowest temperature and prop the door slightly open to allow moisture to escape.
4. Cool Completely

Let the dried slices cool to room temperature before grinding.
5. Grind into Powder

Use a spice grinder, coffee grinder, or high-speed blender.

Work in small batches and pulse until fine.

Sift through a fine mesh sieve for a smooth, uniform powder.
6. Store

Transfer to an airtight glass jar.

Store in a cool, dark place.
