How to Make It
Step 1: Prepare the Cake
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together the flour, sugar, cocoa, baking soda, and salt.
In a saucepan, combine the butter and Coca-Cola over medium heat until the butter melts. Remove from heat.
Stir in buttermilk, eggs, and vanilla.
Gradually mix the wet ingredients into the dry ingredients until smooth.
Divide the batter evenly between the prepared pans and bake for 30–35 minutes or until a toothpick comes out clean. Let the cakes cool completely.
Step 2: Make the Caramel Pecan Layer
In a skillet over medium heat, melt butter and brown sugar together until it begins to bubble.
Add pecans and toss to coat. Cook for 2–3 minutes, then let them cool slightly.
Step 3: Make the Ganache
Heat the cream in a small saucepan until it just begins to simmer.
Pour the hot cream over the chopped chocolate in a bowl. Let sit for 2–3 minutes, then stir until smooth.
Stir in butter for a glossy finish.
Step 4: Assemble the Cake
Place one cake layer on a serving plate. Spread a thin layer of ganache, then sprinkle caramel pecans over it.
Place the second cake layer on top. Pour the remaining ganache over the top, letting it drip down the sides.
Optionally, garnish with extra pecans for an elegant finish.
