Beef and Gravy with Mashed Potatoes
Instructions
Step 1 — Cook the Beef

Heat olive oil in a large skillet or Dutch oven over medium-high heat.

Season beef with salt and pepper, then sear on all sides until browned. Remove and set aside.

In the same pan, sauté onion and garlic until fragrant, about 3–4 minutes.
Step 2 — Make the Gravy

Sprinkle flour over the onions and garlic, stirring to combine and cook for 1–2 minutes.

Slowly whisk in beef broth and Worcestershire sauce, scraping up any browned bits from the pan.

Return the beef to the pan, add thyme, and simmer for 45–60 minutes, or until the beef is tender and the gravy thickens. Adjust seasoning with salt and pepper.
Step 3 — Prepare the Mashed Potatoes

Boil the cubed potatoes in salted water until tender, about 15–20 minutes.

Drain and return potatoes to the pot.

Mash with butter and milk until smooth and creamy. Season with salt and pepper to taste.
Step 4 — Serve

Plate a generous portion of mashed potatoes and top with the tender beef and rich gravy.

Serve warm, garnished with fresh parsley if desired.
