🧀🌿 Cheesy Asparagus Casserole

1 lb fresh asparagus, trimmed and cut into 2-inch pieces

2 tbsp butter

1 small onion, finely chopped

2 cloves garlic, minced

1 cup sour cream

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

½ cup breadcrumbs

Salt and black pepper, to taste

1 tsp paprika (optional)

Preheat oven to 375°F (190°C).

Steam or blanch asparagus for 3–4 minutes until slightly tender; drain and set aside.

In a skillet, melt butter over medium heat and sauté onion and garlic until fragrant and softened.

In a large bowl, combine the cooked onion/garlic, asparagus, sour cream, and cheddar cheese. Season with salt, pepper, and paprika.

Transfer mixture to a greased 9×13-inch baking dish.

Mix breadcrumbs with Parmesan cheese and sprinkle evenly over the top.

Bake for 20–25 minutes, until the casserole is bubbly and the topping is golden brown.
