🧀🌿 Cheesy Asparagus Casserole


Ingredients

  • 1 lb fresh asparagus, trimmed and cut into 2-inch pieces

  • 2 tbsp butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup sour cream

  • 1 cup shredded cheddar cheese

  • ½ cup grated Parmesan cheese

  • ½ cup breadcrumbs

  • Salt and black pepper, to taste

  • 1 tsp paprika (optional)


Instructions >

  1. Preheat oven to 375°F (190°C).

  2. Steam or blanch asparagus for 3–4 minutes until slightly tender; drain and set aside.

  3. In a skillet, melt butter over medium heat and sauté onion and garlic until fragrant and softened.

  4. In a large bowl, combine the cooked onion/garlic, asparagus, sour cream, and cheddar cheese. Season with salt, pepper, and paprika.

  5. Transfer mixture to a greased 9×13-inch baking dish.

  6. Mix breadcrumbs with Parmesan cheese and sprinkle evenly over the top.

  7. Bake for 20–25 minutes, until the casserole is bubbly and the topping is golden brown.

  8. Let cool for a few minutes before serving.

  • Use fresh asparagus for the best flavor; frozen can be used but drain well.

  • Add cooked bacon bits for extra savory flavor.
