Chicken Tortilla Soup

 



Steps

1. Sauté the aromatics

Heat olive oil in a pot. Add the chopped onion and cook until soft. Stir in the garlic and cook for another 30 seconds.

2. Add the vegetables and beans 

Pour in the corn, black beans, and diced tomatoes. Mix well.

3. Add chicken and spices

Add the shredded chicken, cumin, chili powder, paprika, salt, and pepper. Stir to combine.

4. Pour in the broth

Add the chicken broth and bring the soup to a gentle boil.

5. Simmer

Reduce the heat and let the soup simmer for 15–20 minutes so all the flavors blend.

6. Serve with toppings

Ladle the soup into bowls. Add crushed tortilla chips, avocado slices, cilantro, lime, or cheese as you like
