1. Prep the Phyllo Base

  • Preheat oven to 350°F (180°C).

  • Line a 9x13-inch baking pan with parchment.

  • Take two sheets of phyllo at a time and crinkle them lengthwise like an accordion.

  • Place each crinkled pair into the pan side by side until the entire pan is filled.


2. Bake the Dry Phyllo

Bake for 10 minutes until lightly crisp (this helps absorb the custard better).


3. Add the Butter

Remove from oven and slowly drizzle the melted butter evenly over all the phyllo.
Return to the oven for 10 more minutes.


4. Prepare the Custard

In a bowl, whisk together:

  • Eggs

  • Sugar

  • Milk

  • Heavy cream

  • Vanilla

  • Citrus zest (optional)

Mix until smooth.


5. Pour Custard Over Phyllo

Remove the pan from the oven and slowly pour custard all over the crinkled sheets, making sure it gets into all the folds.

Bake again for 30–40 minutes, until golden and custardy.


6. Make the Syrup (optional but delicious)

In a small pot:

  • Add sugar + water

  • Simmer 4–5 minutes

  • Add lemon juice + vanilla
    Let cool slightly.


7. Finish the Cake

As soon as the cake comes out of the oven, pour the warm syrup over the top.
(If using the syrup, start with half — add more only if you want it sweeter.)

Let the cake cool at least 20 minutes before slicing.
