Crockpot Chicken and Dumplings

 


Instructions

Step 1 — Prepare the Crockpot

  • Place the chicken breasts, chicken broth, onion, carrots, celery, garlic, thyme, rosemary, bay leaf, salt, and pepper into your slow cooker.

  • Stir to combine.

Step 2 — Cook the Chicken

  • Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.

Step 3 — Make the Dumpling Dough

  • In a medium bowl, whisk together flour, baking powder, and salt.

  • Add milk and melted butter, stirring until a soft dough forms.

Step 4 — Shred the Chicken

  • Remove the cooked chicken from the crockpot and shred it using two forks.

  • Return the shredded chicken to the crockpot.

Step 5 — Add the Dumplings

  • Drop spoonfuls of the dumpling dough over the hot broth and vegetables in the crockpot.

  • Cover and cook on high for 30–40 minutes, or until the dumplings are cooked through and fluffy.

Step 6 — Serve

  • Remove the bay leaf.

  • Garnish with chopped parsley and serve warm.
