Crockpot Chicken and Dumplings
Instructions
Step 1 — Prepare the Crockpot

Place the chicken breasts, chicken broth, onion, carrots, celery, garlic, thyme, rosemary, bay leaf, salt, and pepper into your slow cooker.

Stir to combine.
Step 2 — Cook the Chicken

Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
Step 3 — Make the Dumpling Dough

In a medium bowl, whisk together flour, baking powder, and salt.

Add milk and melted butter, stirring until a soft dough forms.
Step 4 — Shred the Chicken

Remove the cooked chicken from the crockpot and shred it using two forks.

Return the shredded chicken to the crockpot.
Step 5 — Add the Dumplings

Drop spoonfuls of the dumpling dough over the hot broth and vegetables in the crockpot.

Cover and cook on high for 30–40 minutes, or until the dumplings are cooked through and fluffy.
Step 6 — Serve

Remove the bay leaf.

Garnish with chopped parsley and serve warm.
