Easy, Tender Pot Roast
Steps
1. Sear the roast
Heat olive oil in a large pot or Dutch oven over medium-high heat. Season the roast generously with salt and pepper, then sear on all sides until browned.
2. Add vegetables and seasonings
Place carrots, potatoes, onion, and garlic around the roast. Sprinkle with thyme and rosemary.
3. Pour in the broth
Add beef broth until it comes about halfway up the sides of the roast.
4. Slow-cook
Cover the pot and cook on low heat for 3–4 hours on the stovetop, or in a preheated oven at 160°C (325°F) for 3–4 hours, until the meat is tender and pulls apart easily.
5. Serve and enjoy
Remove the roast and vegetables from the pot. Slice or shred the beef, plate with the vegetables, and spoon over some of the flavorful cooking juices.
