Homemade Cherry Bread: A Sweet, Tender Loaf Bursting with Flavor
Instructions
1. Prep the Cherries
If using fresh or frozen cherries, pit and chop them, then pat dry.
If using maraschino cherries, drain well, chop, and reserve some cherry juice for flavor and color.
2. Mix the Dry Ingredients
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. This ensures an even, fluffy loaf.
3. Mix the Wet Ingredients
In a separate bowl, combine milk, oil, eggs, vanilla, and cherry juice. Whisk until smooth and blended.
4. Combine Wet and Dry Mixes
Pour the wet mixture into the bowl of dry ingredients and gently stir until just combined. Avoid overmixing—doing so keeps the bread soft instead of dense.
5. Fold in the Cherries
Gently fold in the chopped cherries and nuts (if using). The batter will be thick and beautifully speckled with fruit.
6. Pour into Loaf Pan
Grease a standard loaf pan (9x5) and spread the batter evenly into it.
7. Bake
Bake at 350°F (175°C) for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
If the top begins to brown too quickly, loosely tent with foil.
8. Cool Completely
Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack. This loaves benefit from cooling fully to help set the texture.
Optional: Add a Cherry Glaze
For extra sweetness and a stunning finish:
Whisk together powdered sugar, vanilla, and enough cherry juice to create a pourable glaze.
Drizzle over the cooled loaf and let it set before slicing.
