🍋 Magic Lemon Cobbler
👩🍳 Step-by-Step Instructions
1. Preheat & Prep
Preheat your oven to 350°F (175°C).
Place the stick of butter in a 9×9-inch baking dish and put it in the oven to melt.
Remove once fully melted.
2. Make the Batter
In a medium bowl, whisk together:
-
flour
-
sugar
-
baking powder
Stir in the milk and vanilla extract until you get a smooth, pourable batter.
3. Pour (But Don’t Stir!)
Pour the batter directly over the melted butter in your baking dish.
Do not mix them together — the magic layering happens because they stay separate.
4. Add the Lemon
Drop spoonfuls of the lemon pie filling on top of the batter.
Don't stir — the lemon will sink and rise during baking, creating that cobbler texture.
5. Bake
Bake for 45–50 minutes, or until:
-
the top is golden and lightly crisp
-
the center is bubbly and set
6. Cool & Serve
Let it cool for 10–15 minutes so the layers finish setting.
Serve warm with:
-
a scoop of vanilla ice cream
-
a dollop of whipped cream
-
or a sprinkle of powdered sugar
💡 Tips for the Best Lemon Cobbler
-

-
Want it thicker? Add ½ cup more pie filling.
-
Prefer extra buttery flavor? Add 2 extra tablespoons of butter to the pan.
-
