Marinated Cucumbers, Onions, and Tomatoes

 


Instructions

Step 1 — Prepare the Vegetables

  • Wash and slice cucumbers, onions, and tomatoes.

  • Place all vegetables in a large mixing bowl.

Step 2 — Make the Marinade

  • In a small bowl, whisk together olive oil, vinegar, sugar, salt, pepper, and oregano (if using).

Step 3 — Combine and Marinate

  • Pour the marinade over the vegetables.

  • Toss gently to coat evenly.

Step 4 — Chill

  • Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.

Step 5 — Serve

  • Garnish with chopped parsley or basil before serving.

  • Serve as a refreshing side dish with grilled meats, sandwiches, or on its own.
