No-Bake Cheesecake Balls with White Chocolate and Raspberries

 


Instructions

Step 1 — Prepare the Cheesecake Mixture

  • In a mixing bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

  • Gently fold in graham cracker crumbs until fully combined.

Step 2 — Shape the Balls

  • Using a small cookie scoop or spoon, form the mixture into 1-inch balls.

  • Place the balls on a baking sheet lined with parchment paper.

  • Chill in the fridge for 30–60 minutes until firm.

Step 3 — Coat with White Chocolate

  • Melt the white chocolate in a microwave-safe bowl or using a double boiler.

  • Dip each chilled cheesecake ball into the melted chocolate, ensuring it is fully coated.

  • Place back on the parchment-lined baking sheet.

Step 4 — Add Toppings

  • While the chocolate is still soft, sprinkle crushed freeze-dried raspberries on top of each ball.

Step 5 — Chill and Serve

  • Refrigerate the cheesecake balls for at least 1 hour to set.

  • Serve cold and enjoy these elegant, bite-sized treats.
