1. Prepare the Starter (If Needed)
Mix starter, flour, and water in a bowl. Cover and let sit for 4–6 hours until bubbly and active.
2. Make the Dough
In a large bowl, combine bread flour, whole wheat flour, salt, and sugar/honey.
Add water and active starter. Mix until a rough dough forms.
3. Knead and Fold in Flavors
Knead for 5–7 minutes until smooth.
Gently fold in blueberries, lemon zest, and cream cheese cubes.
Be careful not to crush the blueberries.
4. Bulk Fermentation
Cover the dough and let it rise at room temperature for 4–6 hours, folding every 1–2 hours to strengthen the dough.
5. Shape the Loaf
Shape the dough into a round or oval loaf.
Place on parchment paper or a lightly floured proofing basket. Cover and let rise 1–2 hours, until slightly puffy.
6. Preheat and Bake
Preheat oven to 450°F (230°C) with a Dutch oven inside if using.
Carefully transfer the loaf into the Dutch oven or onto a baking sheet.
Score the top with a sharp knife.
7. Bake
