Butter Toffee Pretzels

 



Instructions

  1. Prep the Pretzels: Spread the pretzels out in a single layer on a large, rimmed baking sheet lined with parchment paper or a silicone mat. This step is important for easy coating and cooling.

  2. Make the Toffee Base: In a heavy-bottomed saucepan, melt the butter over medium heat. Once melted, stir in the brown sugar. Bring the mixture to a boil, stirring occasionally.

  3. Achieve Toffee Consistency: Once boiling, reduce the heat slightly and continue to boil for exactly 3 to 4 minutes, stirring constantly. The mixture will darken slightly and thicken. This cooking time is crucial for reaching the soft-crack stage of candy-making, which gives the toffee its ultimate texture. Do not rush this step.

  4. Finish the Toffee: Remove the saucepan from the heat. Quickly stir in the vanilla extract and the baking soda. The mixture will bubble up vigorously—this is normal and helps aerate the toffee for a lighter crunch.

  5. Coat the Pretzels: Immediately pour the hot toffee mixture evenly over the pretzels on the baking sheet. Use a rubber spatula to gently and quickly fold and toss the pretzels until they are all thoroughly coated with the toffee.

  6. Cool and Harden: Spread the coated pretzels back out into a single layer. Let them cool completely at room temperature for at least 1 hour, or until the toffee has hardened and become brittle.

  7. Break and Serve: Once fully cool, break the pretzels apart into bite-sized clusters.

  8. Optional Drizzle: For a final touch, melt your desired chocolate in a small bowl. Use a fork to drizzle the chocolate over the cooled pretzels. Allow the chocolate to set completely before storing (this can be sped up by placing the sheet in the refrigerator for 10 minutes).

Store the cooled and hardened pretzels in an airtight container at room temperature. They will stay crunchy and fresh for up to two weeks.
