1. Prepare the Berry Filling
Chop the berries if large.
Mix them with sugar (or honey) and optional lemon juice.
Set aside to macerate.
2. Make the Cream Filling
In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla until stiff peaks form.
(If using cream cheese, beat it separately until smooth, then fold into the whipped cream.)
Refrigerate until needed.
3. Cut and Shape the Pastry
Preheat oven to 400°F (200°C).
Cut the puff pastry sheet into squares (about 3×3 inches).
Place a small spoonful of berry mixture in the center of each square.
Fold the corners toward the center and pinch tightly to seal, forming a small ball.
4. Brush and Bake
Whisk the egg with 1 tbsp water to make an egg wash.
Brush each pastry ball lightly.
Bake for 12–15 minutes, or until golden, puffy, and crisp.
5. Fill With Cream
Once cooled, use a piping bag to inject the cream into the center of each pastry ball OR slice them gently and spoon the cream inside.
6. Finish and Serve
Dust with powdered sugar.
Serve immediately for the best texture—crispy outside, creamy inside, perfectly sweet.
