The Warm and Wholesome Apple Oatmeal Bake

Instructions

  1. Preheat and Prep: Preheat your oven to 375°F (190°C). Lightly grease an 8x8-inch or 9x9-inch baking dish.

  2. Combine Dry Ingredients: In a large bowl, whisk together the oats, baking powder, cinnamon, salt, and nutmeg.

  3. Add Apples and Nuts: Fold in the diced apples and 1/2 cup of chopped nuts until they are evenly distributed among the dry ingredients. Pour this mixture into the prepared baking dish and spread it into an even layer.

  4. Whisk Wet Ingredients: In a separate medium bowl, whisk together the eggs, milk, maple syrup (or honey), 1 tablespoon of melted butter, and vanilla extract until well combined and frothy.

  5. Soak and Saturate: Pour the wet mixture evenly over the dry ingredients in the baking dish. Gently press down on the oats with a spatula to ensure they are fully saturated and soaking up the liquid.

  6. Add Topping: Drizzle the remaining 1 tablespoon of melted butter over the top of the bake. Sprinkle with a little extra cinnamon and the remaining chopped nuts.

  7. Bake: Bake for 40 to 45 minutes, or until the top is golden brown, the edges are set, and the center is mostly firm when pressed lightly.

  8. Cool and Serve: Let the bake cool on a rack for 5-10 minutes. This allows the oatmeal to fully set. Slice into squares and serve warm, drizzled with extra maple syrup, a dollop of Greek yogurt, or a splash of milk.

🕰️ Make-Ahead Magic

The Apple Oatmeal Bake is an excellent meal prep option. You can assemble the entire bake (steps 1–6) the night before, cover it tightly with plastic wrap, and refrigerate it. In the morning, simply remove the plastic wrap and bake as directed, adding about 5-10 minutes to the baking time since it starts cold.
