Slow Cooker Amish Honey Glazed Carrots


 

Preparation

  1. Cut the carrots
    Slice the peeled carrots into 1½-inch (4 cm) pieces. If the carrots are thick, cut them in half lengthwise first so all pieces are roughly the same thickness. This helps them cook evenly.

  2. Load the slow cooker
    Place the carrots into a 4- to 6-quart slow cooker in an even layer.

  3. Add the glaze ingredients
    Scatter the butter pieces over the carrots. Drizzle the honey evenly on top. Sprinkle with salt, black pepper, and cinnamon.

  4. Stir once
    Gently toss everything in the slow cooker so the carrots get lightly coated with the honey and seasoning. Spread them back into an even layer.

Cooking

  1. Cook on LOW for 4 hours
    Cover and cook on LOW for 4 hours, stirring once halfway through if possible.
    The carrots are done when they are tender when pierced with a fork but still hold their shape.

    (If you’re short on time, cook on HIGH for 2 to 2½ hours, checking for tenderness.)

  2. Create the glaze
    Once tender, uncover the slow cooker and switch to HIGH if it isn’t already. Cook uncovered for an additional 10–15 minutes, stirring once or twice, until the liquid slightly thickens and coats the carrots in a shiny glaze.

Finishing Touch

  1. Taste and adjust
    Taste one carrot and add an extra pinch of salt if needed to balance the sweetness.

  2. Serve
    Transfer to a serving dish and spoon the remaining glaze from the slow cooker over the top. Sprinkle with chopped parsley if using.
