Step-by-Step Instructions

1. Prepare the Dough

In a large bowl, whisk together the warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy. Stir in the olive oil and salt. Gradually add the flour, mixing until a shaggy dough forms.

2. Knead and Rise

Turn the dough onto a floured surface and knead for about 5–7 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm spot for 1 hour, or until it has doubled in size.

3. Portion and Roll

Punch the dough down to release the air. Divide it into 8 to 10 equal pieces and roll them into small balls. On a floured surface, use a rolling pin to flatten each ball into a circle roughly 5–6 inches wide and about 1/4 inch thick.

4. The Skillet Sear

Heat a heavy skillet over medium-high heat. Do not add oil to the pan; a dry sear is key for that authentic flatbread texture.

  • Place one dough circle in the hot pan.

  • Cook for about 1–2 minutes until bubbles begin to form on the surface and the bottom is golden brown.

  • Flip and cook for another 1 minute on the other side.
