Brown and Season the Beef

In a large skillet over medium-high heat, brown the ground beef until completely cooked through, breaking it apart into fine crumbles. Drain any excess grease. Stir in your taco seasoning, a splash of water, and a tablespoon of tomato paste. Simmer for 2 to 3 minutes until the liquid reduces completely.
Soften the Tortillas
Prep time: 2 mins
Stack 5 to 6 corn tortillas at a time between two damp paper towels. Microwave them for 30 to 45 seconds until they are hot, steaming, and completely pliable. Keep them covered until the exact moment you roll them so they don't dry out.
Fill and Roll Tightly
Prep time: 10 mins
Place a warm tortilla on a clean surface. Add about 2 tablespoons of the seasoned beef mixture in a line down the center, and sprinkle a generous pinch of shredded cheese over the top. Roll the tortilla up as tightly as possible around the filling.
Place Seam-Side Down and Bake
Bake time: 15-20 mins
Place the rolled taquito seam-side down on your prepared baking sheet (this keeps them from springing open). Repeat with the remaining tortillas. Brush or spray the tops generously with cooking oil. Bake for 15 to 20 minutes until the edges are deeply golden and crispy.

Freezer Instructions: These are fantastic for meal prep! Roll the taquitos, place them on a baking sheet, and freeze them raw for 2 hours. Once solid, transfer them to a freezer bag. When ready to eat, bake them straight from frozen at 425°F for 20 to 25 minutes
