1. Layer the Base
Place your pork chops in a single layer at the bottom of your slow cooker. If they overlap slightly, that’s fine, but try to give them as much surface contact with the bottom as possible.
2. Mix and Whisk
In a small bowl, whisk together the can of cream soup and the Dijon mustard until smooth. Spread this mixture evenly over the top of the pork chops, making sure they are completely smothered.
3. Slow Cook to Perfection
Cover and cook on LOW for 4 to 5 hours (or HIGH for 2 to 3 hours).
Chef's Tip: Pork can dry out if overcooked, even in a slow cooker. Start checking them around the 4-hour mark on Low. They should register 145∘F (63∘C) on a meat thermometer and give easily to a fork.
4. Rest and Serve
Remove the chops carefully (they might try to fall apart on you!) and let them rest for 5 minutes. Give the mustard sauce left in the slow cooker a good stir to incorporate all the savory pork juices. Spoon the sauce generously over the chops before serving.
