How to Make It

Mellow the onions
15 minutes

Place your finely chopped sweet onion in a small bowl and cover with cold water. Let them soak while you prep everything else. This takes away the raw harshness while keeping the crunch.

Thaw and dry the peas
10 minutes

Place the frozen peas in a colander and run cool water over them to quickly thaw. Let them drain thoroughly, shaking off any excess water so your dressing doesn't get watered down.

Whisk the dressing

Drain your onions very well. In a small bowl, whisk together the mayonnaise, Greek yogurt, relish, mustard, vinegar, fresh herbs, salt, and pepper until smooth and creamy.

In a large bowl, combine the peas, diced Irish cheese, chopped eggs, diced sweet peppers, and the drained sweet onions. Pour the dressing over the top and gently fold until everything is beautifully coated. Cover and refrigerate for at least 30 minutes before serving so the flavors can marry.
