Beef and Bell Pepper Stir-Fry with Flat Rice Noodles — A Timeless Classic Worth Rediscovering
There are some dishes that carry the warmth of generations within every bite. This beautiful stir-fry of tender beef, vibrant bell peppers, and silky flat rice noodles coated in a rich, glossy brown sauce is one of those meals that older generations grew up on — yet somehow slipped out of everyday cooking for many families. The combination of chewy wide rice noodles, savory caramelized beef, and the crunch of colorful peppers tossed in a deeply flavorful sauce is nothing short of spectacular. It comes together quickly in a hot wok or skillet, making it a perfect weeknight dinner that still feels special enough for a weekend table. Once you try it, do not be surprised if it becomes a regular in your own rotation.
Ingredients
- 14 oz wide flat rice noodles (fresh or dried and soaked)
- 1 lb beef sirloin or flank steak, thinly sliced
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 medium white onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1 teaspoon sugar
- 2 tablespoons vegetable oil
- Salt and white pepper to taste
- 2 tablespoons water or beef broth (to loosen sauce if needed)
Marinating the Beef
Before you fire up the wok, give your beef a quick marinade to lock in flavor and ensure tenderness. Combine the sliced beef with 1 tablespoon of soy sauce, 1 teaspoon of cornstarch, a pinch of white pepper, and a drizzle of sesame oil. Toss well and let it rest for at least 15 to 20 minutes while you prep everything else. This short marinate makes a big difference in the final result.
Making the Sauce
In a small bowl, whisk together the remaining soy sauce, dark soy sauce, oyster sauce, hoisin sauce, sugar, and a splash of water or broth. Taste and adjust to your liking. This sauce is what gives the dish its beautiful deep color and that irresistible savory-sweet coating on every noodle and piece of beef.
