Creamy Pour-Over Potatoes: The Coziest Winter Casserole You'll Ever Make

Creamy Pour-Over Potatoes: The Coziest Winter Casserole You'll Ever Make

There is something deeply comforting about a bubbling potato casserole fresh out of the oven on a cold winter evening. This creamy pour-over potato bake is exactly the kind of recipe that feels like a warm hug on a plate. Sliced potatoes are layered into a glass casserole dish, then drenched in a luscious, herb-flecked cream sauce loaded with sautéed onions, garlic, fresh parsley, and plenty of Parmesan cheese. The result is golden, tender, and absurdly satisfying.

What makes this dish so special is the sauce. It comes together quickly in a measuring jug, which makes pouring it evenly over the potatoes an absolute breeze. Once it bakes, the cream soaks into every layer, creating a dish that is creamy through and through with just the right amount of golden crispiness on top.

Ingredients

  • 2 pounds (about 900g) baby or Yukon Gold potatoes, scrubbed and sliced into rounds
  • 1 tablespoon olive oil
  • Salt and freshly cracked black pepper, to taste
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 3 cloves garlic, finely minced
  • 1 small onion, finely diced and sautéed until golden
  • 1/2 cup grated Parmesan cheese, plus extra for topping
  • 2 tablespoons fresh parsley, finely chopped
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon dried thyme or Italian seasoning
  • 1 tablespoon unsalted butter, for greasing the dish

Method

  1. Preheat your oven to 375°F (190°C). Generously butter a glass casserole dish and set it aside.
  2. Wash and slice the potatoes into even rounds, approximately a quarter inch thick. Pat them dry with a clean kitchen towel and season lightly with salt and pepper.
  3. Arrange the potato slices in overlapping layers in the prepared casserole dish, making sure they are spread out evenly from edge to edge.
  4. In a skillet over medium heat, sauté the diced onion in a drizzle of olive oil until soft and golden, about 6 to 8 minutes. Add the minced garlic and cook for another minute until fragrant. Remove from heat and let cool slightly.
  5. In a large measuring jug or pouring pitcher, combine the heavy cream, milk, sautéed onion and garlic mixture, grated Parmesan, chopped parsley, nutmeg, thyme, and a generous pinch of salt and pepper. Stir everything together until well combined.
  6. Slowly pour the creamy sauce evenly over the sliced potatoes, making sure every section of the dish receives a generous coating. Use a spoon to gently press the potatoes down so they absorb some of the liquid.
  7. Sprinkle extra Parmesan cheese over the top and season once more with a little cracked black pepper.
  8. Cover the dish tightly with aluminum foil and bake for 40 minutes. Then remove the foil and continue baking for another 20 to 25 minutes, until the top is golden and the potatoes are completely tender when pierced with a knife.
  9. Allow the casserole to rest for about 10 minutes before serving. This helps the sauce thicken slightly and makes for cleaner, more satisfying portions.

Tips for the Best Results

Try to slice your potatoes as uniformly as possible so they cook evenly throughout. A mandoline slicer makes this effortless if you have one. Yukon Gold or baby potatoes work best here because of their naturally buttery flavor and smooth texture, but russet potatoes also work beautifully if that is what you have on hand.

If you want to add a little extra richness, stir a spoonful of cream cheese or a handful of shredded Gruyère into the pour-over sauce before baking. It takes this dish to an entirely new level of indulgence. Leftovers reheat wonderfully the next day, making this the kind of casserole worth making in a big batch.
