Baked Parmesan Rosemary Potato Crisps

Baked Parmesan Rosemary Potato Crisps are a simple, savory snack that turns humble potatoes into irresistibly thin and crunchy bites. The combination of crisp golden potato slices, nutty Parmesan cheese, fragrant rosemary, and a touch of seasoning creates a snack that feels much more special than ordinary potato chips.

Unlike deep-fried crisps, these are baked in the oven with a light coating of oil, making them wonderfully crisp while keeping the preparation straightforward. They are perfect for snacking, serving alongside sandwiches, adding to a party platter, or enjoying straight from the baking tray.

Ingredients

  • 2 large russet or Yukon Gold potatoes

  • 2 tablespoons olive oil

  • ⅓ cup finely grated Parmesan cheese

  • 1 tablespoon fresh rosemary, finely chopped

  • ½ teaspoon garlic powder

  • ¼ teaspoon onion powder

  • ¼ teaspoon black pepper

  • ¼ teaspoon salt, or to taste

  • Optional: a pinch of smoked paprika for extra flavor

Step 1: Prepare the Potatoes

Start by washing and thoroughly drying the potatoes. You can peel them if you prefer a completely smooth crisp, but leaving the skins on gives them extra texture and a rustic appearance.

Using a very sharp knife or a mandoline slicer, cut the potatoes into extremely thin, even slices. Aim for slices about 1–2 mm thick. Keeping the slices as uniform as possible is important because thin slices become crisp quickly, while thicker pieces may remain soft in the center.

Step 2: Remove Excess Moisture

Place the potato slices in a large bowl of cold water and let them soak for about 10–15 minutes. This helps remove some of the surface starch, which encourages better browning and crispness.

Drain the potatoes thoroughly. Spread them over a clean kitchen towel or several layers of paper towel and gently pat them dry.

This step is particularly important. Excess moisture can cause the potatoes to steam in the oven instead of becoming crisp.
