Ingredients

To make the sausage bites, you'll need:

  • 1 pound smoked sausage or kielbasa

  • 1 cup barbecue sauce

  • 1/3 cup brown sugar

  • 2 tablespoons honey

  • 1 tablespoon Worcestershire sauce

  • 1 tablespoon butter

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon black pepper

  • A pinch of cayenne pepper, optional

For serving:

  • Chopped fresh parsley or green onions, optional

  • Extra barbecue sauce for dipping

  • Toothpicks

Step 1: Prepare the Smoked Sausage

Begin by removing the smoked sausage from its packaging and patting it dry with a paper towel.

Slice the sausage into bite-sized rounds, approximately 1/2 to 3/4 inch thick.

Try to keep the pieces relatively similar in size. This helps them brown and heat evenly during cooking.

You can use traditional smoked sausage, kielbasa, turkey smoked sausage, or another fully cooked smoked sausage you enjoy.

Step 2: Brown the Sausage

Heat a large skillet over medium heat.

Add the sliced sausage to the dry skillet. You generally won't need much oil because smoked sausage naturally releases some fat as it heats.

Cook the pieces for approximately 3–5 minutes on each side, turning occasionally, until they develop browned, caramelized edges.

This step is worth doing even though the sausage is already cooked. Browning creates extra flavor and gives the finished bites a much more appetizing texture.

Once browned, transfer the sausage to a plate and set it aside temporarily.

Step 3: Make the BBQ Glaze

Using the same skillet, reduce the heat to medium-low.

Add the barbecue sauce, brown sugar, honey, Worcestershire sauce, butter, smoked paprika, garlic powder, onion powder, and black pepper.

If you enjoy spicy food, add a small pinch of cayenne pepper.

Stir everything together until the butter melts and the brown sugar begins to dissolve.

Allow the mixture to gently simmer for about 2–3 minutes, stirring frequently.

The sauce should become smooth, glossy, and slightly thicker.
